For the Chocolate Icing:

Sift the Icing sugar along with Cocoa Powder and set it aside. Melt the butter in a saucepan with large enough to hold the whole icing sugar along with cocoa powder mixtures. When butter gets melted while adding the icing sugar and cocoa powder mixture while whisking all time. Add about 1 Cup at a time along with whisking it well and continue adding the sugar until everything which is well incorporated and set the lump free.

. 65 Gram of 2.3 Oz or the 2/3 Cup Unsweetened Cocoa Powder

. 75 Gram or 2.6 Oz or the 1/3 Cup Unsalted Butter

. 250 Ml or the 8.4 Fl. Oz with 1 Cup Milk

. 200 Gram or 7 Oz or 2 Cups Coconut desiccated ( Unsweetened)

Instructions:

First make the Butter Cake for Lamingtons:

The recipe for lamington Cake is actually easy and also does not require advance baking skills while decorating of the cake is easier along with dipping the cake pieces in Chocolate which is rolled into coconut powder. The baking of butter cake along with the chocolate dipping part gives the better results and it gives the Choco-Cake feel which melts into the mouth. Wrapping it well in cling film/plastic foil gets completed with overnight refrigeration.The cake needs resting time after which it is cut into several slice and as the cutting process is easier and cleaner it is less likely to break with significantly less crumbs involved.

. 240 grams of 8.4 Oz/ 2 Cups of all purpose flour

. 2 Teaspoons of the baking powder

. A pinch of salt

. 120 Gram or 4.2 Oz along with 1/2 Cup soft butter

. 150 Gram or 5.3 Oz or the 3/4th cup granulated sugar

. 2 Eggs

. 1 Teaspoon of Vanilla Extract

. 125 ml or the 4.2 Fl. Oz or 1/2 Cup of Milk

Recipe:

. Bake the butter cake one day in advance which needs to spend the night in refrigerator.

. Preheat the oven to 180 Degrees Celsius or the 350 Degrees Fahrenheit.Greasing a square of 20 Cm or the 8 Inch baking dish.

. Shift together to the flour with baking powder and salt then keep it for setting aside.

. In another bowl beat soft butter until it becomes creamy. Also, add the sugar and beat it till it becomes pale and fluffy. Just add one egg and beat it well to incorporate. Add the second egg along with vanilla extract and mix it well.

. Set the mixture at lowest speed by adding flour and milk along with starting and finishing it with the flour. Also, beat the mixture only shortly until it becomes smooth.

. Give batter into the prepared baking dish and bake it for 25-30 minutes until the skewer which gets inserted in middle of cake which comes out clean. Leave the cake in baking dish for about 10 minutes and then transfer the wire into rack and let it cool completely.

. When it gets completely cool which is at the room temperature wrap it well into a plastic foil and then refrigerate it overnight. It also helps the cake to become more stable and crumble less with dip in chocolate icing.

. The next day cut the butter cake into regular squares of about 5cm/2 inch. Placing a wire rack into the top of large baking tray which catch the possible chocolate or coconut drippings.
